Lydia's Chocolate Shoofly Pie

(makes a 9-inch pie)
Preheat oven to 375 degrees Fahrenheit

Ingredients:
For the bottom layer:
1 cup sugar
1 tsp. corn starch
1 tsp. flour
1 1/2 tsp. cocoa
1 egg, beaten
1/2 tsp. vanilla
1 1/2 tsp. Land O' Lakes butter
1 cup water
Unbaked 9-inch pie shell

 

For top layer:
1/2 cup brown sugar
1/2 egg, beaten
1 1/2 tsp. cocoa
1/4 cup lard
1/2 cup molasses, mixed with 1/2 cup hot water
1/2 tsp. vanilla
1 1/4 cups flour
pinch of salt
1/2 tsp. baking soda
1/4 tsp. cinnamon

Directions:
For the bottom layer, combine all ingredients in a saucepan and cook until thick, about 10 minutes. When completely cooled, pour into unbaked pie shell.

To make top layer, mix brown sugar, egg, cocoa, lard, molasses and vanilla until well combined. Add remaining ingredients and set aside until water has cooled. Pour on top of bottom layer and bake at 375 degrees for 40 minutes.
